Coniglio al forno con patate

Rosted rabbit with potatoes

  

   Ingredients

 

    * 700 g of rabbit (3 pieces)
    * 500 grams of potatoes
    * 3 cloves garlic
    * 3 tablespoons extra virgin olive oil (30 g)
    * Some juniper berries
    * Rosemary
    * 2 bay leaves
    * Salt and pepper q.b.

 

   Preparation

Serves 3

 

Turn on the oven must reach a temperature of 200 ° C (400°F).

In a small bowl prepare a sauce with oil, salt, pepper, rosemary and juniper berries, mix well and cook for 10 minutes.

Wash the rabbit pieces and, without drying, place them in an ovenproof dish.

Wash the potatoes, peel, cut into pieces not too large and put them in the pan, add salt and pepper lightly.

Cue the rabbit with garlic and brush well and thoroughly with the sauce prapared, then chop on each piece bay leaves and put the pan in the oven covered with aluminum foil.

Cook for 30 minutes, then pull the pan from the oven, check the moisture in and the rabbit is cooking the potatoes, gently turn over all the pieces.

If you need extra moisture, add a tablespoon of oil with a tablespoon of water and bake for 10 minutes.

After this time, check the cooking, turning all the pieces and cook for 5 minutes.

If necessary, then, with the brown grill for 5 minutes.
